111 Journey...Tutorial. on How to Make Book Marks....Delecious Receipe



The Journey Continues
 Today I have several ideas to share with you. First of all I have a Chicken Fried Rice recipe that isn't over the top on calories or fat, but is over the top on taste!

Chicken Fried Rice

1 cup celery                                                     * 1/2 cup cooked white rice
1/2 cup green onions                                       * 2 Tablespoons Soy Sauce
1/2 cup carrots                                                  2 Teaspoon vegetable oil or Olive Oil
2 eggs scrambled                                              
4 ounces cooked chicken breasts with skin and bone removed...cut in small pieces
Pam cooking spray                                            
Cut celery, green onions, carrots in small pieces...set aside.
Cook white rice and let cool.
In large frying pan, spray with Pam spray, scramble eggs, remove from pan and chop...set aside.
In same frying pan, spray with Pam and cook chicken..set aside
In same pan, 2 teaspoons of vegetable or Olive oil and cook the celery, green onions, and carrots until tender not mushy.
Add all other ingredients...mix and add soy sauce. Heat and Serve.
* you may want to use low-sodium soy sauce.
*can use brown rice instead of white rice.
I don't add salt or pepper. The soy sauce takes care of the need for salt. Pepper is optional.
Serving:
It's difficult to say how many servings you will get from this because the size of chicken breasts vary. If you are on a program that you need to weigh you food, I would weigh the chicken after cooking and before adding it to the rest of the ingredients.

Hint: To reduce cooking time, cook rice and chicken ahead of time, cut up vegetables ahead of time. You will have a delicious, healthy, colorful dinner..even my kids like this.
Book Mark Tutorial
I received a  book mark as a thank you from one of my gals who won my blog candy in December. I thought it was so cute I made a few to give to my daughters, granddaughters and grandson.  These have been around for awhile, but I don't know who came up with the idea.
 
 How to make the book marks

I cut 2 1/4" strips of  8 1/2" x 11" card stock. (I got three book marks out one sheet.)  Using the Big Shot Die Cutting Machine and the Two Tags Die, I ran the card stock through the machine. I folded the card stock strips in half and used the bone folder to get a nice clean crease.
I put the folded card stock just below the end of the tag so I wouldn't cut the tag in half.
Here are a variety of colors I ran through the Big Shot.




On the inside of the tag (book mark) I added a piece of magnet on both ends. This will hold the book mark in place.  Magnet Sheets can be found in the Big Catalog.
Using the 1 3/8" Circle Punch and the1 3/4" Scallop Circle Extra Large Punch I punched out circles and scallops.

 I stamped the circle with the Defining Alphabet for the letter "C" for our grandson and Used Lovely Letters Alphabet for the book marks for the girls.




I used Tombow Adhesive on  the scallop and the circle. On the circle I put a small dab of glue on each scallop. Before attaching the scallop circle to the book mark I used 2-Way glue and Dazzling Diamonds glitter  and on two of the scallop circles I used Champagne Glass Glitter from the Holiday Mini catalog.

Dazzling Diamonds glitter.
Here they all are ready to hold a place in a book.
These are easy to make and would be nice to put one in a card or letter as a surprise.
My 111 Journey
 I had another good day yesterday. Planning my food for each meal really does help me stay on track. For me, I don't have to be thinking of food all the time. I just look at my menu for the day and when it's time for a meal...I'm ready to cook.
There are times when what I have planned for a meal just doesn't sound good or something comes up and I can't cook the planned food. I have this happen a lot. I used to let this throw me and eat whatever I could grab, but I learned that "Be Prepared" isn't just for Boy or Girl Scouts! Last night was just such a night. I had fish planned but fish isn't my favorite and after cooking the fish, I just couldn't eat any. My husband didn't have any trouble eating his share. :) What did I do? I got out some lettuce, low fat cottage cheese, celery, green peppers, cucumbers, onions and Fat Free French Dressing and made a large salad. I used 1/2 cup of cottage cheese and it was all I needed. I felt satisfied. A large salad for me won't be a large salad for you. My pouch can't hold as much as your stomach. I waited a half hour and had 1/4 of a cantaloupe. Very tasty!
I always keep on hand low fat cottage cheese, reduced fat cheese, eggs and lean ham, turkey, and chicken  thin slices in the refrigerator. In the pantry, I stock up on brown and white rice, pasta, canned fruit in it's own juice, canned veggies, protein bars, and  dried fruit like prunes and raisins.  In the freezer I have fruit, veggies and store bought meals or entrees with 300 calories or less. This way, I have good tasting, healthy foods and snacks to grab when I'm seeking food or need a change in the daily menu. 

What to do in time of a crisis or high stress situation?
This morning my husband, Norris returned to work after being off work since October 13th when he had 2 heart attacks and then a few days later had double bypass heart surgery. He has recovered very well and stayed in good spirits the entire time. He was looking forward to getting back on schedule.

He left home at 6:45a.m. EST, we said out good byes, I told him to be careful driving and not over do the first day. The roads were really bad. Covered with snow and then rain and then the temperature dropped in the night. Over 150 schools closed due to the roads. At 7:00 a.m., Norris called me. He had been in an accident with a small car. Norris has a large work truck,about 1/3 the size of a semi. He didn't get hurt and he felt okay physically. He checked his heart rate and it was good.

The man in the small car passed Norris on the right when they were still on the on ramp coming on to I-94, a divided highway with speeds of 70 mph. Thankfully Norris wasn't going that fast. The man cut in front of Norris, slid across the highway, did donut turns and slid back across in front of Norris. At this time Norris was continuing to drive on the road going east, the man had turned so many times he was facing north. Norris T-boned him on the drivers side. The man was taken to the hospital in an ambulance. We are waiting to see how the man is. 

I had just finished praying for Norris safety and for him not to over due on his first day back to work, when he called and told me about the accident. The Lord did  kept him safe. A little bumped around but he is safe. 
Due to the large size of Norris' truck, he and the truck came out of the accident better than the other man.
He was able to drive to the body shop and they pulled the bumper back so it wouldn't rub on the right front tire. The estimate was $2200.00 for repair. After several hours Norris called me saying he was finally on his way to work.
I didn't let the news influence me to eat to comfort myself. I had a cup of decaf coffee and headed for my stamping studio. Thus the book marks!  I did eat a protein bar for breakfast.

  1. I'm so sorry for the accident...I'm sure things will go well. Life is so unexpected right? I remember when I had my card accident and it was just a regular day and then boom someone decided to hit my car and run...had a 50/50 chance of life or death that day but if there is one thing that I have learned through being in dark holes a few times in my life is that it's always nearly impossible to see the little light at the end of the tunnel but you do see it eventually. Heavenly Father has a plan for all of us and there is a reason for everything...even if we don't like everything all the time.
    I just said a prayer for you guys...keep your chin up...things will work out at the end...we do have that promise.
    By the way, I was thinking of posting my new year's resolution of eating less and moving more on my blog soon and was going to post this link with an inspiring article about people who lost weight and blogged about it and how blogging really made a difference in their results.   2. Just checking in & saw the bookmark tut. Your 'fancier' version looks great! Now, I need to make some for the grands to hopefully encourage their reading.

    I've also got recipes if you are interested - granted they are southern, but you could reduce the seasonings - LOL.
    My husband also had a bypass 3 years ago. He is doing fine now, but we need to get back to our healthier eating plan. That is another goal for this year.
